Ferment the Forest, 21+

Join award-winning fermenter, Mike Henry, to learn how to make your own forest sodas! A specialty cocktail made with fresh, fermented soda will be provided after the program compliments of professional bartender Erika Joyner-Davis. Mike is an avid forager, member of the Western Pennsylvania Mushroom Club, home chef, home brewer, and fermenter. He has made fermented beverages, including kombucha, water kefir, kvass, root beer, hard cider, mead and beer. Erika is a Pennsylvania native who enjoys hiking and foraging. She loves turning foraged items into beautiful cocktails, finding balance in her creations, her craft, and her life as a partner and mom.
This step-by-step class will instruct you on how to source and ferment sodas at home using wild foraged wildflowers and pine needles. Samples of finished sodas, and a specialty craft cocktail using fermented soda will be served at the end of this stationary program.
